Always with the lid off; putting the lid on while the water heats helps it to reach boiling sooner, but once the water is boiling, remove lid, gently add pasta, and stir gently.

Once pasta is added to your boiling water, it will take a moment for it to return to a full boil. Once it returns to a rolling boil, make sure the pasta has plenty of room to roll and dance around in the boiling water.

For a single packet of pasta, we recommend a minimum of 12Qt. pot, filled just past half-way with water.

NO! Never rinse your pasta if you are making a hot dish! Take the freshly strained pasta and dress with sauce and olive oil right away. Often you will see the faucet running when Italians strain their pasta, but that is to cool the plumbing from the boiling water being poured down the sink - not for the pasta!

Preserved in 100% Tuscan EVOO, refrigerating the antipasto can make the oil solidify. If all contents are submerged in oil, they can stay preserved on the counter. If you consider keeping for longer than a day, we recommend storing in the refrigerator and taking them out with plenty of time to return to room temperature.

Lots of recipes call to add a bit of the pasta water to the sauce. Our sauce is very light, made with fresh tomatoes as opposed to tomato paste, and doesn’t require any added pasta water.

One pasta meal kit can serve 4 (very hungry) to 6 people.

Yes! Our perfectly portioned salt tablets ensure proper seasoning of the pasta. However, if you prefer lighter salt, 2 tablets are recommended.
